Ingredients List:

  • 1 package (about 14 oz) puff pastry, thawed
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped

  • 1 clove garlic, minced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup ricotta cheese
  • 1 large egg (for egg wash)
  • 1 tbsp sesame seeds (optional, for topping)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Spinach Filling:
    • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 3–4 minutes.
    • Add the garlic and sauté for another 30 seconds until fragrant.
    • Add the spinach and cook, stirring occasionally, until wilted (about 5 minutes for fresh spinach). If using frozen spinach, ensure it’s well-drained before adding.
    • Remove from heat and stir in the crumbled feta cheese and ricotta. Season with salt and pepper to taste. Set aside to cool.
  2. Prepare the Puff Pastry:
    • Preheat your oven to 375°F (190°C).
    • Roll out the puff pastry on a lightly floured surface. If using pre-rolled pastry, simply unroll it.
    • Cut the pastry into equal-sized squares or rectangles, depending on how large you want your pastries.
  3. Assemble the Pastries:
    • Place a spoonful of the spinach and feta mixture in the center of each pastry square. Be careful not to overfill.
    • Fold the pastry over the filling to form a pocket or rectangle. Press the edges together to seal. You can crimp the edges with a fork for a decorative touch.
  4. Egg Wash & Topping:
    • In a small bowl, beat the egg. Brush the top of each pastry with the egg wash for a golden, shiny finish.
    • Sprinkle sesame seeds on top for extra crunch and flavor (optional).
  5. Bake the Pastries:
    • Place the filled pastries on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for 20–25 minutes or until the pastries are puffed up and golden brown.
  6. Serve:
    • Let the pastries cool for a few minutes before serving. Enjoy them warm!

  • You can prepare these in advance and refrigerate them before baking. Just brush them with egg wash before baking directly from the fridge.
