Ingredients:

  • 250g cottage cheese (whipped or small-curd, drained)
  • 120g dark chocolate (70% cocoa, chopped)
  • 2–3 tbsp honey or maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt

Optional toppings:

  • Whipped cream
  • Fresh berries
  • Shaved chocolate
  • Chopped nuts

Instructions:

  1. Melt the Chocolate
    • Place chopped chocolate in a heatproof bowl.
    • Melt over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
  2. Blend the Base
    • In a food processor or high-speed blender, add cottage cheese, honey, vanilla, and salt.
    • Blend until completely smooth and creamy.
  3. Combine Chocolate & Cheese Mixture
    • Pour melted chocolate into the blender and process until fully incorporated.
    • Scrape down the sides to ensure an even texture.
  4. Chill the Mousse
    • Divide mixture into serving glasses or bowls.
    • Refrigerate for at least 30 minutes to set.
  5. Serve
    • Top with whipped cream, berries, or chocolate shavings before serving.
