Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients

  • 4 boneless, skinless chicken breasts

  • 4 oz (½ cup) cream cheese, softened

  • ½ cup cooked bacon, crumbled

  • ½ cup shredded cheddar cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika

  • Salt & black pepper to taste

  • 1 cup crushed Nacho Cheese Doritos

  • 1 egg, beaten

  • 2 tbsp all-purpose flour (for dredging)

  • Cooking spray or oil (for baking)

Directions

  • Prep the Chicken: Preheat oven to 375°F (190°C). Butterfly each chicken breast by slicing horizontally, but not all the way through, to create a pocket.
  • Make the Filling: In a bowl, mix cream cheese, bacon, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper until well combined.
  • Stuff the Chicken: Divide the filling evenly among the chicken breasts, spreading it inside the pockets. Secure with toothpicks if needed.
  • Crunchy Coating: Set up a breading station—place flour in one bowl, beaten egg in another, and crushed Doritos in a third. Dredge each stuffed chicken in flour, dip in egg, then press into Doritos, coating evenly.
  • Bake to Perfection: Place chicken on a greased baking sheet. Lightly spray the tops with oil for extra crispiness. Bake for 22-25 minutes or until the internal temperature reaches 165°F (74°C).
  • Rest & Serve: Let the chicken rest for 5 minutes before slicing. Garnish with extra bacon or green onions if desired.

Notes

  • For a lighter version, use reduced-fat cream cheese and turkey bacon.
