These doughnuts feature a rich yeast dough that fries up beautifully light and fluffy. Once coated in sugar and filled with silky homemade vanilla pastry cream, every bite melts in your mouth. The recipe is perfect for beginners and experienced bakers alike, making it a wonderful addition to your homemade dessert collection.

Ingredients

For the Dough:

  • 4 cups all-purpose flour
  • 2¼ teaspoons instant yeast
  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • 2 large eggs
  • ¾ cup warm whole milk
  • ¼ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

For the Vanilla Cream Filling:

  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 egg yolks
  • ¼ cup cornstarch
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

For the Sugar Coating:

  • 1½ cups granulated sugar

Instructions

Begin by preparing the dough. In a large mixing bowl, combine the warm milk, sugar, and yeast. Allow the mixture to rest for about five minutes until it becomes foamy. Add the eggs, softened butter, vanilla extract, salt, and half of the flour. Mix until everything is combined, then gradually add the remaining flour until a soft dough forms. Knead the dough for about 8 to 10 minutes until it becomes smooth, elastic, and slightly tacky.

Transfer the dough to a lightly greased bowl, cover it with plastic wrap or a clean kitchen towel, and let it rise in a warm place for approximately 1½ hours, or until doubled in size.

While the dough is rising, prepare the vanilla pastry cream. Heat the milk in a saucepan until it begins to steam but does not boil. In another bowl, whisk together the egg yolks, sugar, and cornstarch until smooth. Slowly pour the warm milk into the egg mixture while whisking continuously to prevent scrambling. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens into a smooth custard. Remove it from the heat and stir in the butter and vanilla extract. Transfer the cream to a bowl, cover the surface directly with plastic wrap, and refrigerate until completely chilled.

Once the dough has doubled in size, gently punch it down and transfer it onto a lightly floured work surface. Roll the dough to about half an inch thick and use a 3-inch round cutter to cut out circles. Arrange the dough rounds on parchment paper, leaving some space between each one. Cover them loosely with a towel and allow them to rise again for about 30 to 45 minutes until they become light and puffy.

Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C). Carefully lower a few doughnuts into the hot oil, making sure not to overcrowd the pan. Fry each doughnut for about 1½ to 2 minutes per side until beautifully golden brown. Remove them using a slotted spoon and place them on a wire rack lined with paper towels to drain any excess oil.

While the doughnuts are still slightly warm, roll each one generously in granulated sugar so that every side is evenly coated. The warmth helps the sugar stick perfectly, creating the classic sweet exterior.

Transfer the chilled vanilla pastry cream into a piping bag fitted with a filling tip. Insert the tip into the side of each doughnut and gently pipe in the cream until the doughnut feels slightly heavy. A small amount of cream peeking out from the opening is a sign that it’s perfectly filled.

These doughnuts are best enjoyed fresh while the dough is soft and the filling is creamy. Serve them with a hot cup of coffee, tea, or a glass of cold milk for an unforgettable homemade treat.

For the best results, always use fresh yeast, avoid overheating the milk, allow the dough enough time to rise fully, and maintain the frying temperature at around 350°F. If the oil becomes too hot, the outside will brown too quickly while the inside remains undercooked. If it’s too cool, the doughnuts will absorb excess oil and become greasy.

You can also customize these doughnuts with different fillings. Chocolate pastry cream, Nutella, strawberry jam, lemon curd, or cookies-and-cream filling all make delicious alternatives to classic vanilla custard. You can even drizzle melted chocolate over the sugar-coated doughnuts for an extra indulgent finish.

Store filled doughnuts in an airtight container in the refrigerator for up to two days. If you’d like to prepare them ahead of time, fry the doughnuts first and fill them just before serving to keep them as fresh and fluffy as possible.

These homemade cream-filled sugar doughnuts combine everything you love about classic bakery pastries—soft, airy dough, a crisp sugary coating, and a rich, velvety vanilla filling. They’re perfect for breakfast, dessert, celebrations, or simply treating yourself to something special. Once you make them from scratch, you’ll discover just how rewarding homemade doughnuts can be, and this recipe is sure to become a favorite you’ll return to again and again.
