Gluten Free Homemade Healthy OREOs

Ingredients:
For the Cookies:
- 1 1/2 cups gluten-free all-purpose flour
 - 1/2 cup unsweetened cocoa powder
 - 1/2 cup granulated sugar
 - 1/4 cup unsalted butter, softened
 - 2 large eggs
 - 1 teaspoon vanilla extract
 
For the Filling:
- 1/2 cup unsalted butter, softened
 - 1 1/2 cups powdered sugar
 - 1/2 teaspoon vanilla extract
 
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
 - Make the Cookies: In a large bowl, whisk together gluten-free flour, cocoa powder, and sugar. Add softened butter and mix until a dough forms.
 - Add Eggs and Vanilla: Beat in the eggs and vanilla extract until well combined.
 - Roll Out the Dough: On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
 - Cut Out the Cookies: Use a round cookie cutter or a glass to cut out circles of dough.
 - Bake the Cookies: Place the cookies on the prepared baking sheet and bake for 12-15 minutes or until firm to the touch.
 - Make the Filling: Beat the softened butter and powdered sugar until smooth. Add vanilla extract and mix well.
 - Assemble the Oreos: Once the cookies are cool, spread a small amount of filling on one half of a cookie and top with another cookie.
