Making marshmallows at home may sound complicated, but with the right steps and a few basic ingredients, it is actually very simple. This recipe shows you how to make beautiful two-layer pink marshmallows without using an oven. The result is light, airy, and perfectly soft marshmallows that taste far better than store-bought ones.


Ingredients

  • 30 g gelatin

  • 120 ml (½ cup) cold water

  • 250 g (1¼ cups) sugar

  • 100 ml water

  • 20 ml lemon juice

  • Powdered sugar (for dusting)

  • Cornstarch

  • Vegetable oil (for greasing the mold)

  • Red food coloring (optional, for the pink layer)


How to Make Pink Marshmallows

Step 1: Prepare the Gelatin

Start by placing the gelatin into a clean bowl. Pour 120 ml of cold water over it and stir gently with a spoon. Make sure all the gelatin is moistened. Set the bowl aside for about 10 minutes. During this time, the gelatin will absorb the water and swell. This step is very important because properly hydrated gelatin gives marshmallows their soft and fluffy texture.


Step 2: Make the Sugar Syrup

Take a heavy-bottomed saucepan and add the sugar, 100 ml of water, and lemon juice. Place the pan over medium heat and stir lightly until the sugar dissolves completely.
Once the mixture starts to boil, reduce the heat slightly and let it cook for about 10 minutes. Avoid stirring too much during this stage. The syrup should become clear and slightly thick. After 10 minutes, remove the pan from the heat.


Step 3: Combine Gelatin and Syrup

While the sugar syrup is still hot, add the bloomed gelatin directly into the saucepan. Stir well until the gelatin fully dissolves in the syrup.
Now transfer this mixture to a mixing bowl. Using an electric mixer or hand mixer, beat the mixture on high speed for about 7 minutes. As you beat, the mixture will increase in volume, turn pale in color, and become thick, fluffy, and glossy. This whipping process adds air to the marshmallows, giving them their signature light texture.


Step 4: Prepare the Mold

Lightly grease a silicone mold or a square dish with vegetable oil. Make sure the oil is spread evenly, especially in the corners. This will prevent the marshmallows from sticking and make them easier to remove later.
Pour half of the whipped marshmallow mixture into the prepared mold. Use a spatula or spoon to spread it evenly and smooth the surface.


Step 5: Create the Pink Layer

To the remaining marshmallow mixture, add a few drops of red food coloring. Mix gently until you achieve a soft pink color.
Carefully pour the pink mixture over the white layer in the mold. Pour slowly to keep the layers neat and visible. Smooth the top gently if needed.


Step 6: Let the Marshmallows Set

Place the mold in a dry area at room temperature. Allow the marshmallows to set undisturbed for several hours until they are firm to the touch. Do not refrigerate them, as moisture can affect the texture and make them sticky.


Step 7: Dust with Powdered Sugar

In a small bowl, mix powdered sugar and cornstarch together. Once the marshmallows are fully set, generously sprinkle this mixture over the top.
This coating helps prevent sticking and gives the marshmallows a clean, smooth finish.


Step 8: Cut and Finish

Carefully remove the marshmallow slab from the mold. Using a sharp knife, cut it into evenly sized cubes.
Lightly coat all sides of the marshmallow pieces with more powdered sugar and cornstarch mixture to keep them from sticking together.
