Slow Cooker Strawberry Cranberry Pineapple Jam

Slow Cooker Strawberry Cranberry Pineapple Jam

This homemade Strawberry Cranberry Pineapple Jam is a beautiful combination of sweet strawberries, tart cranberries, and juicy pineapple. Everything slowly cooks together until the fruit breaks down into a thick, glossy, spreadable jam with a rich red color. It is perfect for toast, biscuits, pancakes, waffles, oatmeal, yogurt, or even as a topping for cheesecake and desserts.

Ingredients

  • 4 cups fresh strawberries, washed, hulled, and chopped
  • 3 cups fresh or frozen cranberries
  • 2 cups fresh pineapple, finely chopped
  • 3 cups granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 package powdered fruit pectin, about 1.75 ounces
  • 1/4 teaspoon salt
  • 1/2 cup water

Instructions

1. Prepare the Fruit

Start by washing the strawberries and cranberries thoroughly. Remove the green tops from the strawberries and cut them into small pieces. If your strawberries are particularly large, you can chop them into smaller chunks so they cook more evenly.

Wash and finely chop the pineapple. Fresh pineapple gives the jam a wonderful tropical flavor, but canned pineapple can also be used. If using canned pineapple, drain it very well before adding it to the recipe.

Fresh cranberries can be used directly. If you are using frozen cranberries, there is no need to thaw them completely.

2. Add Everything to the Slow Cooker

Lightly grease the inside of a large slow cooker or crockpot.

Add the chopped strawberries, cranberries, and pineapple. Pour in the sugar and gently stir the fruit until everything is evenly coated.

Add the lemon juice, lemon zest, salt, and water. Stir again to combine.

At this stage, the fruit will still look very chunky and colorful. As it cooks, the strawberries and pineapple will soften while the cranberries burst and release their natural juices.

3. Begin Slow Cooking

Cover the slow cooker with the lid and cook on LOW for about 3 to 4 hours.

Stir the mixture every 45 to 60 minutes. As the fruit heats up, the cranberries will begin popping and the mixture will become increasingly juicy.

After a few hours, the fruit should be very soft. Use a potato masher or the back of a large spoon to gently crush some of the fruit.

You do not need to completely puree everything. Leaving some small pieces of strawberry and pineapple gives the finished jam a homemade texture.

4. Add the Pectin

Once the fruit has softened and the mixture is hot and bubbling, sprinkle in the powdered fruit pectin gradually while stirring constantly.

Make sure the pectin is distributed evenly so that it does not form lumps.

Continue cooking uncovered for another 30 to 45 minutes, stirring occasionally. Leaving the lid off allows excess moisture to evaporate, which helps the jam become thicker.

The mixture will continue to thicken as it cools, so do not worry if it appears slightly thinner than expected while it is still hot.

5. Add the Vanilla

Turn off the slow cooker and stir in the vanilla extract.

Taste a small amount once it has cooled slightly. If you prefer a sweeter jam, you can add a little extra sugar, but remember that the cranberries provide a naturally tart flavor that balances the sweetness beautifully.

The lemon juice is also important because it brightens the fruit flavor and keeps the jam from tasting overly sweet.

6. Test the Consistency

Before transferring the jam into jars, check its consistency.

Place a small spoonful of jam on a chilled plate and allow it to cool for a minute. Push it gently with your finger. If it wrinkles slightly and holds its shape, the jam is ready.

If it is still very runny, continue cooking uncovered for another 10 to 15 minutes and test again.

Remember that homemade jam becomes noticeably thicker once it has completely cooled.

7. Prepare the Jars

For refrigerator jam, use clean glass jars with clean lids. Wash the jars thoroughly with hot soapy water and rinse well.

Carefully spoon the hot jam into the jars, leaving some space at the top. Wipe the rims clean before putting on the lids.

Allow the jars to cool at room temperature before transferring them to the refrigerator.

For long-term shelf-stable canning, use a tested canning recipe and proper water-bath processing instructions rather than relying on this slow-cooker method alone. Fruit acidity, sugar levels, and processing time all matter for safe shelf storage.

8. Let the Jam Set

Place the sealed jars in the refrigerator and allow the jam to cool completely.

The jam will continue to set as it chills. For the best texture, let it rest overnight before serving.

The next day, you should have a thick, glossy fruit spread packed with strawberry, cranberry, and pineapple flavor.

How to Serve

There are so many ways to enjoy this homemade jam. Spread it over warm toast with butter, spoon it over freshly baked biscuits, or swirl it into Greek yogurt for an easy breakfast.

It is also delicious on pancakes, waffles, French toast, English muffins, and oatmeal.

For dessert, warm a little jam and drizzle it over vanilla ice cream or cheesecake. You can also use it between cake layers, spread it inside thumbprint cookies, or mix it into a simple cream cheese frosting.

For a beautiful appetizer, serve the jam over a block of softened cream cheese with crackers. The sweet-tart fruit pairs especially well with creamy cheeses.

Storage

Store the finished jam in clean, sealed jars in the refrigerator. It should generally be used within a few weeks, provided it has been kept refrigerated and handled with clean utensils.

You can also freeze the jam in freezer-safe containers, leaving enough room for expansion. Thaw it in the refrigerator before using.

Always discard jam if you notice mold, an unusual smell, fermentation, or other signs of spoilage.

Helpful Tips

For a smoother jam, use an immersion blender after the fruit has softened. Blend only until you reach the texture you like.

For a chunkier version, simply mash the fruit lightly and leave plenty of strawberry and pineapple pieces.

Frozen cranberries work extremely well and are available year-round. Strawberries can also be fresh or frozen, although fresh strawberries provide a particularly bright flavor.

If your pineapple is very juicy, you may need a little additional cooking time with the lid off to reach the desired thickness.

The combination of cranberries and strawberries gives this jam its gorgeous deep-red color, while pineapple adds natural sweetness and a tropical note. Lemon juice keeps the flavor fresh and prevents the jam from becoming too heavy or sugary.

This is one of those easy homemade recipes that makes the kitchen smell amazing while it cooks. Once finished and cooled, spoon the vibrant red jam into small glass jars and keep them ready for breakfast, baking, desserts, or homemade gifts.
