Made with fresh lemons, eggs, sugar, and butter, this beautiful golden spread is delicious on toast, biscuits, scones, pancakes, cakes, and so much more. Once you make it from scratch, you may never want to buy store-bought lemon curd again!
This recipe uses simple ingredients and straightforward steps to create a silky lemon spread that looks beautiful in glass jars and tastes absolutely amazing. Whether you are preparing it for your family, serving it at breakfast, or sharing a jar with someone special, homemade lemon curd is always a wonderful treat.

Ingredients

  • 1 cup fresh lemon juice, approximately 4–6 lemons
  • 1 tablespoon finely grated lemon zest
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, cut into small cubes
  • 1 small pinch of salt
  • 1/2 teaspoon vanilla extract, optional

Instructions

Step 1: Prepare the Lemons

Wash the lemons thoroughly under running water and dry them with a clean towel. Before cutting them, grate the yellow outer peel to collect the lemon zest. Avoid grating too deeply into the white pith underneath, as it can make the curd taste bitter.
Cut the lemons in half and squeeze out the juice. Remove any seeds and strain the juice through a fine-mesh strainer for a smooth finish. Measure one cup of lemon juice and set it aside.

Step 2: Whisk the Eggs and Sugar

In a medium heatproof saucepan or bowl suitable for a double boiler, whisk together the eggs and granulated sugar. Continue whisking until the mixture looks smooth and the sugar begins to dissolve.
Add the fresh lemon juice, lemon zest, and a pinch of salt. Whisk everything together until fully combined. The mixture will look thin at this stage, but it will gradually thicken as it cooks.

Step 3: Cook the Lemon Mixture

Place the saucepan over low heat, or set the heatproof bowl over a saucepan containing gently simmering water. If using a direct saucepan, stir continuously and keep the heat low to prevent the eggs from scrambling.
Cook for approximately 8–15 minutes, stirring constantly with a whisk or heatproof spatula. The mixture will slowly become thicker, smoother, and more custard-like.
Avoid allowing the mixture to boil. For food safety, cook the egg mixture to 160°F (71°C), checking with a food thermometer. When ready, the curd should coat the back of a spoon, and a finger drawn across the coating should leave a clear line.

Step 4: Add the Butter

Remove the saucepan from the heat. Add the butter cubes a few at a time, whisking after each addition until the butter melts completely into the lemon mixture.
The butter gives the curd its rich flavor, silky texture, and beautiful glossy appearance. If you enjoy a slightly softer citrus flavor, you can add the optional vanilla extract at this stage.

Step 5: Strain for a Silky Texture

For an extra-smooth finish, pour the warm lemon curd through a fine-mesh strainer into a clean heatproof bowl. This removes the lemon zest, any small bits of cooked egg, and other particles that might affect the texture.
Use a spatula to gently press the mixture through the strainer. The finished curd should be thick, creamy, and bright golden yellow.

Step 6: Fill the Jars

Wash the jars and lids thoroughly with hot, soapy water and rinse them well. Pour the warm lemon curd into the clean jars, leaving a little space at the top. Let the curd cool briefly, then cover and refrigerate promptly.
For the best results, use small jars so you can open one at a time and keep the remaining jars sealed and refrigerated. Do not treat ordinary sealed jars of lemon curd as shelf-stable canned food.

Step 7: Chill Until Thick

Place the covered jars in the refrigerator. The lemon curd will become thicker as it cools, usually reaching its ideal consistency after several hours.
Once chilled, it should be creamy enough to spread on toast or spoon over desserts. The flavor also becomes more balanced as the fresh lemon, sugar, and butter blend together.

Helpful Tips for Perfect Lemon Curd

Use fresh lemons: Freshly squeezed juice gives the curd its bright, natural citrus flavor. Bottled juice may produce a different taste.
Keep the heat low: Gentle cooking helps prevent scrambled eggs and creates a smooth, creamy texture.
Stir constantly: Pay special attention to the bottom and corners of the saucepan so the mixture cooks evenly.
Strain while warm: Warm curd passes through a strainer more easily than cold curd.
Adjust the sweetness carefully: If your lemons are especially tart, you may prefer a little more sugar next time. Keep in mind that changing the proportions can affect the finished texture.
Use clean utensils: Always scoop lemon curd with a clean spoon to help maintain its quality.
